This week’s recipe is sautéed kohlrabi. You will need:
1 1/2 pounds kohlrabi
1/2 teaspoon salt
1 small onion, sliced and separated into rings
1 clove garlic, minced
1/4 cup butter or margarine, melted
1/2 teaspoon dried basil
1/8 teaspoon freshly ground pepper
Trim kohlrabi roots and tops. Peel kohlrabi bulb and cut into julienne strips. Combine kohlrabi and salt in a Dutch oven, cover with water and bring to a boil. Cover, reduce heat and simmer 10 minutes or until almost tender. Drain.
Saute kohlrabi, onion and garlic in butter in a large skillet for five to six minutes or until vegetables are tender. Toss with basil and pepper.
Yields five servings at 118 calories and 9.4 grams of fat per serving.
