According to a Chicken Express-Shawnee Page, owners Rick and Glenda Brown are shooting for a November opening at their building under construction near the corner of 45th Street and N. Harrison.

Though rain has slowed down progress a bit, the site is still on target for a Fall opening — provided weather continues to cooperate.

Rick Brown said he has begun the hiring process; applications are now being accepted.

The Browns will run operations, as well as manage their three other stores.

The couple had a grand opening for their Del City location in March.

“In Oct. of 2016 we bought the Norman and Pauls Valley Chicken Express Stores,” Brown said.

The 1.16-acre site is on the west side of the 4400 block of North Harrison Avenue — just south of the Quality Tunnel Car Wash.

Known for their Express Tenders and sweet tea, Brown said Chicken Express does best in small towns from 15,000 to 40,000 population.

“We look for high traffic areas and middle class families — people looking to feed a family of four or five for under $30,” he said.

Most Chicken Express Stores are located in Texas — so Oklahoma is wide open, he said.

Brown said when they bought the Norman and Pauls Valley stores they started looking in Shawnee, and met the Smith family, who sold them the acre of land.

“We believe it will be a great location and everyone we talk to in town is excited about us coming,” he said.

Brown said he and his wife are very hands-on and enjoy connecting with the local community.

“We love to sponsor schools athletics or partner with local churches and organizations for fundraisers,” he said. “My wife and I also work in all of our stores so we are not like a big chain restaurant, but very involved in the day-to-day operations.”

According to the website, at chickene.com, Chicken Express has restaurants in Texas, Oklahoma, Arkansas, Louisiana and Georgia.
